Development of an IoT framework for the automatic collection of machine, process data in medium-sized bakery operations

While the digital world has already made its way into many other production areas, the bakery industry has so far benefited little from these technological developments. This is because many baking processes are manually controlled and rely on expert knowledge. In addition, the process data from the machines is still not automatically captured via sensors. This paper describes a procedure for digitizing baking processes by developing an IoT framework consisting of an IoT device including measurement methods, an edge gateway, and a simulation-based solution for process optimization.

eProcurement systems enable employees to handle the purchase of C-parts and indirect requirements independently with a minimum of work. This article explains how this can free up space for the strategically decisive procurement of A and B parts. The basic idea is to outsource the operative procurement activity to those who have the demand - so-called demand carriers. Decisive for the success of this approach is the right mix of individual freedom and sufficient control. The need to sometimes respond very quickly to changes requires companies to have a high degree of flexibility and speed of reaction. Application system architectures, which usually consist of old and self-developed systems, often do not allow companies to meet these requirements. However, investment funds for new software are limited, so priorities must be set when it comes to replacing legacy systems. An adaptability analysis is an efficient analysis method for planning the renewal of the application system landscape. This article describes the procedure and results of an adaptability analysis, using the example of an internationally active automotive supplier.

Supported by an intelligent assistance system, the sustainability and digitalisation of the tideindependent Industriehafen Bremen can be increased. To guarantee port security, a constant level of the isolated harbour is essential. There is great potential for increasing energy efficiency if the lock naturally waters the harbour basin at times of high tide instead of employing a pump station. This contribution shows how artificial intelligence and innovative software systems were used to develop an assistance system to improve existing procedures without making extensive changes to the existing port infrastructure. Manufacturing SMEs are structurally di erent from other companies and therefore have special requirments for Manufacturing Execution Systems (MES) and the associated software selection. Process models must therefore be adapted. For the identication of requirements, a systematic categorization based on existing models was performed. With the help of an existing market research platform, further selection steps were developed in order to provide a useful and easy-to-use tool for SMEs, which enables them to select efficiently sufficient MES-software according to their needs.
